Custard slice



250g caster sugar
100 g corn flour(Maizena)
70 g custard powder
750 ml milk
250 ml cream
60 g butter
2 teaspoons vanilla paste
3 egg yolks

Combine the sugar, corn flour and custard powder in saucepan. Gradually add half the milk and whisk until smooth. Add rest of milk and cream and stir over medium heat until the mixture boils and thickens. Remove pan from heat, add the butter and vanilla and whisk until the mixture is smooth. Whisk in the egg yolks until combined.
Layer of cream crackers at the bottom of dish. I fitted 12 into my dish. Top with second layer of cream crackers

2 cups of icing sugar
2 tablespoons butter
Pulp of 4 passionfruit

Combine sugar, butter and passionfruit pulp in a saucepan and stir over low heat until a smooth consistency. Pour over slices.
Cool in the fridge
