Huli Huli Chicken



Serves 8

* 2kg/4pounds chicken wings
* 2 cups sweet soy sauce (Tamari or ketchap manis)
* 3 teaspoons freshly minced ginger (I used Gourmet Garden Ginger)
* 2 garlic cloves, crushed

To prepare your wings, remove the wing tip by cutting between the joint at the top end of the tip with a sharp knife, and discard. Section the remaining part of the wing by cutting between the joint. In a large bowl, combine the remaining ingredients with cup water and stir to combine. Add the wings, cover and refrigerate for 8 hours. Drain and discard marinade from chicken. Grill the chicken, covered, over medium heat for 6 to 8 minutes on each side or until cooked through.

Optional: Delicious served with a Simple Pineapple Salsa: Into a large bowl combine

* 400g/14oz freshly chopped sweet pineapple, 1⁄2 red onion, finely chopped, 1 long fresh red chilli, seeded, finely chopped and 2 tablespoons fresh torn coriander. Season with sea salt and cracked pepper and a sprinkle of fresh lime juice if you have it.
