Potato Pinwheels



4 medium potatoes (mashed & left to cool)
2 shortcut bacon rashers (finely chopped)
2 shallots chopped
1 egg beaten
Half cup grated vintage or tasty cheese
2 tsp chopped parsley
2 sheets puff pastry
Finely chopped capsicum (optional)
Salt & pepper to taste

Pre-heat oven to 200C. Mix together all ingredients. Spread half the mixture along one edge of pastry sheet. Roll up like a swiss roll and slice into 1cm pieces. Place on a greased, baking paper lined tray and bake in oven for 20 – 30 minutes. NB Slices may be frozen for later use. May add sliced olives for extra flavour or subsitiute sautee’d mushrooms intead of bacon for vegetarians. Enjoy!
